The loss of volatile oil can be signi®cantly reduced by a cryogenic grinding technique (Pruthi, 1980). Liquid nitrogen at ÿ195.6°C provides the refrigeration needed to precool the spices and maintain the desired low temperature by absorbing the heat generated during the grinding operation.
